3 cups flour
1/4 tsp. instant yeast
1/4 tsp. salt
1 1/2 cups water (or substitute half of this with beer, like I did)
Mix all the ingredients in a bowl. Set aside to rise for 12 hours. After 12 hours, flour a surface and fold the dough a few times. I fold it about 5-10 times. Then form into a round smooth ball and place back into the bowl to let rise for a few more hours before backing.
After 2-3 hours, place a pot with a lid in the oven and preheat the oven to 500 degrees. Before you put the loaf into the oven sprinkle semolina or flour on one side of the loaf and put that side on the bottom. Bake for 30 minute for 500 degrees, then open the lid and continue to bake at 425 degrees for 15 more minutes.
