Apple Pie Delight

I was surprised by how good this apple pie tasted since I normally don't like baked apples in anything. I often think back to that particular pie and how good it was.

Ingredients
6 apples, peeled, cored & sliced
1/2 cups sugar
2 tbs flour
2 tbs brown sugar
1 tbs lemon juice
1 tsp cinnamon
1/4 tsp salt
1/8 tsp nutmeg
1/4 cup pecan, coarsely chopped
2 tbs butter
2 pie crusts

Preheat oven at 425 degrees. Combine apples, sugar, lemon juice, cinnamon, salt, nutmeg and pecan into a large bowl. Combine well, until apples are evenly coated.

FOR THE PIE CRUST:
Ingredients
2 cups flour
3/4 tsp salt
3/4 tsp sugar
3/4 cup cold butter
1/4 cup cold water

Combine flour, salt, and sugar in a food processor and mix. Add butter and mix until it resembles coarse meal. Add the cold water and mix until it just begins to clump together. If you pinch some of the crumbly dough and it holds together, it's ready. Put the dough into fridge for at least half an hour.

Afterwards roll one part of the dough out into a pie pan and puncture bottom 5 times with a fork and trim the edges. Pour apple mixture into the pan. Using a cookie cutter, cut shapes out of the 2nd part of pie dough and place overlapping on the apples. Collect dough trimmings and roll out and cut shapes out again.

Brush the top crust with egg wash (egg yellow & water) before you put it into the oven.
10 minutes into the baking place a piece of aluminum loosely over the pie. Bake for 40 minutes overall.
